Sweetcorn and Tofu Fritters


Makes 8-10 fritters



  • 200g Nutrisoy or Soyco Organic Plain Tofu, diced into very small cubes

  • Fresh corn kernels cut from 2 medium size corn cobs

  • 2 small cans of creamed corn

  • 3 spring onions, finely sliced

  • 2 cloves of garlic, crushed

  • 1 small brown onion, finely chopped

  • 100g plain flour

  • 2 eggs, lightly beaten

  • 1 tsp sugar

  • Salt and pepper to taste

  • 1 large red chilli, finely sliced (optional)

  • Vegetable oil for frying



  1. In a bowl, mix all the ingredients until combined well.

  2. Meanwhile, heat oil in a deep frying pan or a wok until a slight ripple effect occurs on surface of oil.

  3. Carefully drop heaped tablespoons of batter into the pan/wok. Cook in batches for 3-4 minutes on each side or until golden brown.
