Herbed Tofu on Crackers


Serves 8-10




  • 1 packet of Nutrisoy Plain Tofu (350g), crushed until smooth

  • 2 tbsp olive oil

  • 1 small brown onion, finely chopped

  • 1 tsp curry powder

  • 1 tsp ground paprika

  • ½ tsp chilli powder (optional)

  • Salt and pepper to taste

  • 1 cup baby spinach

  • 5 sun-dried tomatoes, cut into halves or thirds

  • Store-bought Waterthins Crackers




  1. Heat the oil in a large frying pan or medium wok over medium heat.

  2. Add the onion and fry for 1 minute, then add the tofu, stir fry for 1-2 minutes until heated through.

  3. Add the curry powder, ground paprika, chilli powder, salt and pepper.

  4. Add the spinach and stir for 1 minute or until wilted and let the tofu mixture simmer. Remove from the heat, allow to cool slightly.

  5. To serve, make a sandwich out of two crackers filled with tofu mixture and top with a slice of sun dried tomato.
