Tofu, also known as bean curd, is a soybean product made by curdling fresh soy milk. Usually sold in rectangular blocks, tofu is an off-white colour and has a neutral taste, and absorbs the flavours of surrounding ingredients.
Tofu is a great source protein and iron, particularly for vegetarians, and is also high in calcium. It is low in saturated fat and contains no cholesterol. Tofu is also a very versatile food. In addition to acting as a vegetarian meat-substitute in savoury dishes, tofu can be scrambled, used in dips, and even desserts!
-
Tempeh, another soybean product, is made from cooked fermented soybeans which are traditionally cultured with Rhizopus Oligosporus culture. Tempeh has a firm texture and a distinctive nutty mushroom flavour.
Like tofu, it is highly versatile, taking on the flavours of the other foods with which it is cooked, and can be used in any type of cooking style. Tempeh is a excellent source of protein, iron and dietary fibre, and is low in saturated fat and free of cholesterol.
