Teriyaki Tofu Stir-Fry

 

Serves 4-6

Ingredients

 

  • 1 packet of Nutrisoy Teriyaki Tofu or Soyco Japanese Tofu (200g), sliced into long strips

  • 1 tbsp vegetable oil

  • ½ tbsp garlic, crushed

  • 1 small onion, sliced

  • ½ small red capsicum, cut into thin strips

  • ½ carrots, cut into thin strips

  • 1 celery, thinly sliced

  • 3 shiitake mushrooms, sliced

  • 1 bunch of baby bok choy, sliced

  • 1 small broccoli, cut into florets

  • ¼ Chinese cabbage, shredded

  • 1 tbsp light soy sauce

  • 1 tsp of sesame oil

  • Pinch of white pepper

 

Method

 

  1. Heat the oil in a preheated frying pan or wok over medium to high heat.

  2. Add the garlic, onion, capsicum, carrots, celery and mushrooms and cook for 1-2 minutes.

  3. Add tofu and the rest of the vegetables, continue stirring for 1 minute.

  4. Add pepper, soy sauce and sesame oil, stir for another minute until all heated through. Serve.
