Tofu & Coleslaw Salad

Serves 4

Ingredients

 

  • 1 packet of Soyco Chinese Honey Soy Tofu (200g), cut into long strips

  • 2/3 cup whole egg mayonnaise

  • 2 tbsp mustard

  • 1 tsp smoked paprika

  • 1 apple, shredded

  • Salt and pepper

  • ½ white cabbage, shredded

  • ½ red cabbage, shredded

  • 2 carrots, shredded

  • 1 can chickpeas, washed and drained

  • 1 bag of baby spinach

 

Method

 

  1. In a large salad bowl, combine mayonnaise, mustard, smoked paprika and apple. Season with salt and pepper to taste; mix evenly.

  2. Add cabbages, carrots and chickpeas. Toss to coat.

  3. Serve on a plate, top with spinach and tofu strips.
