Indian Vegetarian Yellow Curry

 

Serves 6-8

 

Ingredients

 

  • 1 packet of Nutrisoy Plain Tofu (350g), cut into bite sizes

  • 1 packet of Nutrisoy Plain Tempeh (300g), cut into bite sizes

  • 1 tbsp olive oil

  • 1 onion, finely sliced

  • 2 tbsp yellow curry powder

  • 1 tsp salt

  • 1 cup light coconut milk

  • 1 cup water

  • 10-12 broccoli florets

  • 6 small green and red tomatoes; cut into half

 

Method

 

  1. Place the oil in a saucepan over a medium heat and fry the onion until fragrant.

  2. Add the tempeh, stir through until slightly golden.

  3. Add the tofu, mix gently.

  4. Put the curry powder, salt and coconut milk.

  5. Add water. Stir until all ingredients are well mixed.

  6. Add the broccoli and tomatoes; mix gently and simmer until the vegetables just cooked.

  7. Serve with naan bread or rice.
